This honey-processed Arabica coffee from Crystal Valley brings together its warm Coorg climate, and a slow, carefully managed drying stage.
When first ground, the coffee releases rich, pudding-like aromas of sweet pastry, brown sugar and gentle brown spice. A berry-like gentle acidity comes through in the cup as the coffee cools, and is rounded out by a light honey and nut flavour.
The cup is a structured and layered coffee, well-rounded and pleasant easy drinking brew! This coffee will pair well both with and without milk.
What is a Honey-Processed Coffee?
Fully ripe cherries are picked by hand and depulped. Rather than being washed after depulpling, (making it a washed process coffee), the natural layer of sticky, sugary mucilage is kept intact on the beans, and dried slowly on raised beds under a polyhouse for up to ten days. Holding that sticky layer allows the sugars to concentrate and develop a silky, rounded texture in the cup.
Once the coffee reaches 11–12% moisture, it’s rested in jute for at least two months, allowing the flavours to settle and the structure to tighten. The result is a clean, bright and balanced honey-sun-dried lot that reflects both the conditions of Crystal Valley and the technical focus of South India Coffee Company’s work on low-intervention Arabica.

About Crystal Valley Estate:
Crystal Valley Estate sits at 985 MASL in the Biligiri village of North Coorg, where steep northeast-facing slopes, clay-loamy soils and a rugged, rocky landscape shape the character of the coffee.
Originally dense jungle, coffee cultivation began with plants from the Coffee Board and neighbouring estates. Today, the 25-acre estate is expertly run by Mr. Mac Machaiah, whose approach focuses on selective picking, careful drying and low-intervention post-harvest work.
The region’s hot summers, strong monsoon winds and around 70 inches of annual rainfall create a challenging environment, but one that consistently produces distinctive profiles. The estate works closely with South India Coffee Company (SICC), its Production partner, supporting climate-focused research and forward-thinking processing across India.
