Grown 1350 metres above sea level, on the Bolavens Plateau in the south-east of the country, this coffee expands the boundaries of unique flavours that coffee can bring. 

After reaching optimum ripeness, the coffee cherries are picked and undergo a special process known as 'carbonic maceration', an innovation borrowed from the wine industry. The cherries are added to sealed containers and left to ferment within a carbon dioxide-rich environment, with careful monitoring to avoid over-fermentation.

This type of post-harvest processing develops complex and unique flavours, often rich berry or juicy tropical notes, enhancing the natural flavours within the coffee beans. 

We recommend enjoying this coffee as a filter style coffee to enjoy its lighter body and juicy complexity, but also makes a great flat white!

Interesting fact!

This coffee estate in Laos is part of the International Multi-location Variety Trial led by World Coffee Research (WCR). In this project, 35 Varieties of coffee are collected from around the world and then planted in over 60 test plots in 23 countries. This will result in widespread production and quality increases in as little as 5 years, and contribute to more sustainable farmer livelihoods and a stronger coffee sector.
